The formula

Ingredients

Shared mild crumble

  • 400 g raw 93% lean ground beef
  • 300 g canned lentils, drained and rinsed
  • 100 g onion, finely diced
  • 1 tsp (5 g) olive oil
  • 100 g smooth passata
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ¼ tsp fine salt
  • ¼ cup (60 mL) water

Kid version: 2 lunchboxes

  • 4 small soft tortillas (25 g each)
  • 60 g shredded mild cheddar
  • 160 g cucumber, cut into short thin sticks
  • 160 g ripe melon flesh, rind and seeds removed, cut into small thin pieces

Adult version: 2 lunchboxes

  • 100 g dry brown rice
  • 1 cup (240 mL) water, or the rice package ratio
  • 160 g romaine, shredded
  • 160 g tomato, diced
  • 1 ripe avocado (120 g flesh), diced
  • 80 g plain Greek yogurt
  • 1 tbsp (15 mL) lime juice
  • 1 tsp hot sauce

Equipment

Skillet, saucepan with lid, instant-read thermometer, kitchen scale

Allergens and ingredient notes: Kid version: wheat, milk. Adult version: milk; hot sauce labels vary. Soft corn tortillas may change the kid allergens.

The process

Step by step

  1. Cook brown rice in its listed water according to the package, typically a covered simmer for 30–40 minutes; this may extend the stated cooking time if your rice requires it. Use the package liquid ratio if different.
  2. Heat oil in a skillet over medium heat. Cook onion 4–5 minutes until soft. Add beef and cook, breaking it into fine crumbles, until no pink remains and it reaches 160°F (71°C). Stir in lentils, passata, cumin, paprika, salt and crumble water; simmer 5–7 minutes until thick with no loose liquid.
  3. Weigh the cooked crumble. Allocate 20% to each kid lunchbox and 30% to each adult lunchbox, so the full batch is used. Spread the 4 crumble portions and cooked rice into shallow containers and refrigerate promptly within 2 hours, until cold.
  4. Kid version: divide 60 g cheddar equally among 4 tortillas and add half of each kid’s crumble portion to each of their 2 tortillas. Fold into soft tacos; cut into smaller bites if needed. Add 80 g cucumber and 80 g prepared melon to each kid box in separate compartments.
  5. Adult version: divide rice, romaine, tomato and avocado equally between 2 adult boxes; add one adult crumble portion to each, keeping the lettuce separate from the moist meat. Mix yogurt, lime juice and hot sauce and divide into 2 sealed cups. Add sauce at lunch.

The Devotti twist: Finely crumbled beef is stretched with tender lentils; splitting before the adult sauce keeps kids’ tacos mild.

Pack it well

Pack all four meals cold. Keep adult lettuce, yogurt sauce and kid fruit away from the crumble; these boxes are designed to be eaten cold. Refrigerate cooked food promptly in shallow containers and within 2 hours; chill fully before closing lunchboxes. Transport at 40°F (4°C) or colder in an insulated bag with two cold sources, one above and one below the food, or refrigerate on arrival. Discard perishable food left above 40°F for more than 2 hours, or 1 hour above 90°F (32°C).

Swaps and serving notes

Use soft corn tortillas for kids and check they fold easily. Replace beef with ground turkey cooked to 165°F (74°C). Adult hot sauce stays completely separate. Check the school’s current ingredient rules and each packaged ingredient label; no lunch is universally school-safe. Adapt bite size and firmness to the child’s age and eating skills; no skewers or toothpicks.

Make ahead and storage

Refrigerate cooked crumble and rice for up to 3 days. Add salad, avocado, fruit and assembled tacos on packing day.
