Brown-Butter Apple Cheesecake Wontons
The formula

Ingredients

Apple cheesecake filling

  • 150 g peeled apple, cut into very small ¼-inch dice
  • 1 tsp (5 g) unsalted butter
  • 1 tbsp (12 g) light brown sugar
  • ¼ tsp ground cinnamon
  • 1 tbsp water
  • 80 g cream cheese, softened

Wrappers

  • 20 standard wonton wrappers, about 3½ inches square
  • 2 tbsp water, for sealing
  • 2 tsp neutral oil, for brushing all wontons

Brown-butter finish

  • 2 tbsp (28 g) unsalted butter
  • 1 tbsp maple syrup
  • 2 tsp granulated sugar
  • ¼ tsp ground cinnamon

Equipment

Air fryer, small skillet, pastry brush, shallow bowls

Allergens and ingredient notes: Wheat, milk; wonton wrappers often contain egg. Browned butter tastes nutty but does not itself contain tree nuts; check all packaged ingredients for allergens.

The process

Step by step

  1. Cook apple with the filling butter, brown sugar, filling cinnamon, and 1 tbsp water in a small skillet over medium-low for 6–8 minutes, until the apple is soft and the pan is nearly dry. Spread on a plate and cool 10 minutes. Fold into softened cream cheese and divide roughly into 20 small portions, about 2 tsp each.
  2. Place one wrapper on a clean board. Add about 2 tsp filling to the center, moisten two adjacent edges with a little sealing water, and fold into a triangle. Press out trapped air and seal firmly. Repeat for 20 wontons, keeping unused wrappers covered with a damp towel. Do not overfill.
  3. Preheat the air fryer to 350°F (175°C) according to its manual. Brush both sides of all wontons lightly with the listed 2 tsp oil. Arrange 4 in a single layer with gaps, or more only if they fit freely. Air-fry 6–8 minutes per batch, turning after 4 minutes, until the wrapper is golden and cooked through. Repeat for the remaining batches, checking early as the fryer gets hotter.
  4. While they cook, melt the finish butter in a small skillet over medium-low, swirling until the milk solids turn golden brown and smell nutty, about 3–5 minutes. Immediately remove from heat and stir in maple syrup carefully; the mixture may bubble. In a separate small bowl, combine the finish sugar and cinnamon.
  5. Rest wontons 2–3 minutes because the filling is hot. Serve 5 per person, dividing brown-butter maple drizzle and cinnamon sugar evenly over the portions just before eating.

The Devotti twist: The apple is cooked into the cheesecake filling before wrapping, while a separate brown-butter finish adds depth without soaking the wrappers during cooking.

Air-fryer setup and batch notes

Use thin wonton wrappers, not tortillas or thick egg-roll sheets. Keep filling modest and seals firm. Five batches of 4 are included in the total time; a larger model may hold more. All filling and brown-butter preparation is done on the stovetop.

Appliances vary: use the listed time as a starting range, check early, leave space for airflow, and follow your model’s manual for preheating and compatible cookware. Use the stated doneness cues and internal temperatures rather than time alone.

Make ahead and storage

Refrigerate cooked wontons and leftover drizzle separately within 2 hours and use within 2 days. Reheat wontons at 325°F (165°C), checking early, until filling reaches 165°F (74°C); warm drizzle gently and add afterward.
