Coconut Chickpea & Rice Two-Way Lunch Boxes
A mild coconut chickpea base becomes a sweetcorn rice box for kids and a spinach curry bowl with mango chutney for adults.

Ingredients
Shared coconut chickpea base
- 500 g canned chickpeas, drained and rinsed
- 100 g onion, finely diced
- 1 tsp (5 g) neutral oil
- 1 garlic clove (3 g), minced
- ½ tsp ground turmeric
- ½ tsp ground cumin
- 200 mL canned light coconut milk, stirred
- 100 mL water
- ¼ tsp fine salt
- 200 g dry basmati rice
- 1½ cups (360 mL) water for rice, or package ratio
Kid version: 2 lunchboxes
- 100 g frozen sweetcorn
- 160 g ripe mango flesh, cut into small thin pieces
- 100 g cucumber, cut into short thin sticks
Adult version: 2 lunchboxes
- 120 g baby spinach
- 1 tsp curry powder
- 1 tbsp (15 mL) lime juice
- 40 g mango chutney
- 20 g chopped cilantro
- 100 g cucumber, diced
Equipment
Saucepan with lid, deep skillet, kitchen scale
Allergens and ingredient notes: Coconut; curry powder may contain mustard or other allergens, and chutney labels vary. Verify every ingredient against school rules.
Step by step
- Rinse basmati rice and cook in its listed water according to the package, typically a covered simmer for 12–15 minutes followed by 5 minutes off the heat. Use the package liquid ratio if different.
- Heat oil in the deep skillet over medium heat. Cook onion 5 minutes until soft. Add garlic, turmeric and cumin; stir 30 seconds. Add chickpeas, coconut milk, the base water and salt. Simmer gently 10 minutes until chickpeas are tender and the sauce lightly coats them.
- Weigh the finished chickpea base. Allocate 20% to each kid lunchbox and 30% to each adult lunchbox. For kids, lightly crush their chickpeas with a fork to remove firm round shapes. Cook corn according to the package, drain and divide between the 2 kid portions.
- Return the 2 adult portions to the skillet. Stir in spinach and curry powder and simmer 2–3 minutes, until spinach wilts and curry powder is cooked into the sauce. Remove from heat and add lime juice.
- Divide cooked rice by weight: 20% for each kid box and 30% for each adult box. Spread rice and chickpea portions into shallow containers; refrigerate promptly within 2 hours until thoroughly cold.
- Kid version: pack each allotted rice and crushed-chickpea portion with half the corn, 80 g mango and 50 g cucumber sticks, keeping fruit separate. Adult version: pack each allotted rice and spinach-chickpea portion with 50 g diced cucumber, 10 g cilantro and 20 g chutney in a sealed cup. Eat cold, stirring chutney into the adult portion at lunch.
The Devotti twist: The base stays mild until divided; crushing the kid chickpeas changes their texture while spinach and curry deepen only the adult portions.
Pack it well
Pack thoroughly chilled rice and coconut chickpeas with two cold sources. Seal chutney separately. These boxes are designed for cold eating. Refrigerate cooked food promptly in shallow containers and within 2 hours; chill fully before closing lunchboxes. Transport at 40°F (4°C) or colder in an insulated bag with two cold sources, one above and one below the food, or refrigerate on arrival. Discard perishable food left above 40°F for more than 2 hours, or 1 hour above 90°F (32°C).
Swaps and serving notes
If coconut is unsuitable, replace its milk with an appropriate plain unsweetened cooking alternative and check the sauce consistency. Adult curry powder can be omitted if preferred; check its ingredients and heat. Check the school’s current ingredient rules and each packaged ingredient label; no lunch is universally school-safe. Adapt bite size and firmness to the child’s age and eating skills; no skewers or toothpicks.
