Coconut Curry Chicken Roti Crunch Wraps
A toasted roti parcel traps thick coconut curry chicken, carrot, and spinach inside.

The formula
Ingredients
Curry filling
- 1 lb boneless skinless chicken thigh, diced into ½-inch pieces
- 1 tbsp neutral oil
- ½ cup finely diced onion
- 1 tbsp grated fresh ginger
- 2 garlic cloves, minced
- 1 tbsp curry powder
- ½ tsp fine salt
- ½ cup full-fat canned coconut milk
- ½ cup finely diced carrot
- 1 cup packed baby spinach
- 1 tbsp fresh lime juice
Wraps
- 6 large cooked roti or soft flour tortillas, about 10 inches across
- 2 tbsp neutral oil, for crisping
- ¼ cup plain Greek yogurt
- 1 tbsp chopped cilantro
Equipment
Large skillet, spatula
Allergens and ingredient notes: Wheat, milk, coconut; check curry blend and roti labels.
The process
Step by step
- Heat the filling oil in a skillet over medium heat. Add onion and carrot and cook 4–5 minutes, until beginning to soften. Stir in ginger, garlic, curry powder, and salt for 30 seconds.
- Add chicken and cook 4–5 minutes, turning. Add coconut milk and simmer 6–8 minutes, stirring, until the chicken reaches 165°F (74°C), the carrot is tender, and the sauce is thick enough to cling rather than pool. Cook a little longer uncovered if needed.
- Stir in spinach until wilted, then remove from heat and add lime juice. Spread the filling on a tray and let steam subside for 10 minutes; hot wet filling will soften the wraps.
- Warm the cooked roti briefly so they fold without cracking. Divide all filling equally among them. Fold two sides inward, then fold top and bottom over to make closed rectangular parcels.
- Heat half the crisping oil in a nonstick skillet over medium heat. Toast three parcels seam-side down for 2–3 minutes per side, until golden and the filling is hot. Repeat with the remaining oil and wraps. Serve with the yogurt and cilantro divided over the portions or on the side.
The Devotti twist: Reducing the coconut curry before wrapping keeps the filling creamy and the toasted roti exterior crisp.
