Cranberry Pomegranate Velvet Fizz
A ruby gin fizz with tart cranberry, juicy pomegranate, and a light aquafaba cap.

Ingredients
Cocktail
- 1½ fl oz gin
- 1 fl oz unsweetened cranberry juice, not cranberry cocktail
- 1 fl oz pomegranate juice
- ½ fl oz fresh lemon juice
- ½ fl oz prepared 1:1 simple syrup
- ½ fl oz aquafaba, liquid drained from canned chickpeas
- 2 fl oz chilled plain sparkling water
- 1 cup ice, for shaking
- ¾ cup ice, for the glass
Finish
- 1 small rosemary sprig
- 1 tsp pomegranate arils
If making simple syrup
- 2 tbsp granulated sugar
- 2 tbsp hot water; omit this group if using prepared syrup
Equipment
Shaker, fine strainer, 16-fl-oz highball glass
Allergens and ingredient notes: Alcohol, chickpeas; check gin and juice labels.
Measurements use US fluid ounces (1 fl oz ≈ 30 mL), tablespoons (tbsp), and teaspoons (tsp). Syrup and tea batches may make extra: use only the cocktail quantity listed. These recipes contain alcohol and are for adults 21 and over.
Step by step
- If making syrup, dissolve the optional sugar in its hot water and cool completely. Measure only ½ fl oz into the drink; the batch makes extra. Otherwise use prepared syrup and omit the optional group.
- Put gin, cranberry juice, pomegranate juice, lemon juice, measured syrup, and aquafaba in a shaker without ice. Seal firmly and dry-shake for 15 seconds. Add the shaking ice and shake again for 12–15 seconds.
- Fill the highball with its separate ice. Fine-strain the shaken mixture into it, then slowly add sparkling water down the inside of the glass. Give one gentle lift with a bar spoon; do not shake carbonated water.
- Let the light foam settle for 15 seconds. Garnish with the rosemary sprig and pomegranate arils. The foam depth varies with aquafaba; this is a fizzy highball, not a thick cream drink.
The Devotti twist: Two unsweetened red juices keep the color vivid while aquafaba softens the texture without egg white.
Make ahead and storage
Build to order and add sparkling water last. Refrigerate unused aquafaba and juices according to their labels; homemade syrup keeps refrigerated up to 3 days.
