01

Crostini

  • 1 baguette, cut into 24 thin slices
  • 2 tbsp olive oil
02

Topping

  • 8 oz goat cheese, softened
  • 3 tbsp heavy cream
  • 1 tsp finely grated lemon zest
  • 1 lb sirloin steak

  • 1 tsp kosher salt, divided
  • ½ tsp black pepper
  • 2 shallots, finely sliced
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp finely cut chives
02 / The process

Make it.

Prepare in order, then finish close to serving time.

  1. 01
Heat oven to 400°F. Brush baguette slices with 2 tbsp olive oil and bake 8–10 minutes until golden and crisp.
  2. 02
Whip goat cheese, cream, lemon zest, and ¼ tsp salt until smooth.
  3. 03
Pat steak dry; season with ½ tsp salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear steak about 3–5 minutes per side, adjusting for thickness, until the center reaches 145°F; rest at least 3 minutes (10 minutes gives easier slicing), then slice thinly across the grain.
  4. 04
Cook shallots in the same pan over medium heat 4–5 minutes. Add balsamic vinegar, honey, and remaining ¼ tsp salt; simmer 1–2 minutes until glossy.
  5. 05
Spread each toast with goat cheese. Add steak, shallots, and chives. Serve promptly so the bread stays crisp.
