Fennel Grapefruit Dry Martini
The formula

Ingredients

One drink — all oz are US fl oz

  • 2 oz London dry gin
  • ¾ oz dry vermouth
  • 2 tbsp (about 7 g) thinly sliced fresh fennel bulb
  • 2 dashes grapefruit bitters
  • 1 cup ice cubes, for stirring
  • 1 strip grapefruit peel, about 2 inches long

Equipment

Mixing glass, muddler, fine strainer, chilled 5-oz Nick and Nora glass

Allergens and ingredient notes: Alcohol, sulfites in vermouth; check bitters.

Liquid oz means US fluid ounces (1 fl oz ≈ 30 mL); solid ingredients use the weights or spoon measures listed. Each recipe makes one drink. For adults 21 and over.

The process

Step by step

  1. Gently press sliced fennel with vermouth in mixing glass 4 times. Add gin, bitters and ice. Stir 25–30 seconds until cold.
  2. Fine-strain into chilled Nick and Nora glass without ice. Express grapefruit peel over the drink and rest it across rim. Discard strained fennel.

The Devotti twist: Fresh fennel lightly infuses vermouth during mixing, avoiding an overly sweet anise liqueur.

Make ahead and storage

Mix one drink to order and serve immediately; do not store a diluted finished drink.
