Golden Fig Sour
The formula

Ingredients

Cocktail

  • 2 fl oz bourbon
  • ¾ fl oz fresh lemon juice
  • ½ fl oz ginger-honey syrup, made below
  • 1 tsp smooth fig preserves
  • ¾ fl oz aquafaba (liquid drained from canned chickpeas)
  • 1 cup ice

Small-batch ginger-honey syrup

  • 2 tbsp honey
  • 2 tbsp water
  • 1 tsp finely grated fresh ginger

Finish

  • 1 fresh fig wedge

Equipment

Shaker, fine strainer, chilled 7-fl-oz coupe

Allergens and ingredient notes: Alcohol, chickpeas; contains honey. Check spirit labels.

Measurements are US fluid ounces (fl oz), tablespoons (tbsp), and teaspoons (tsp). Syrup components may make extra: use only the drink quantity listed. These recipes contain alcohol and are intended for adults 21 and over.

The process

Step by step

  1. Warm the honey, water, and ginger over low heat until smooth. Steep off heat for 5 minutes, strain, and cool completely. Measure ½ fl oz for this drink and save the remaining syrup.
  2. Put bourbon, lemon juice, syrup, fig preserves, and aquafaba in a shaker without ice. Seal firmly and shake for 15–20 seconds to build the foam.
  3. Add the ice and shake for another 12–15 seconds until chilled. Fine-strain into the chilled coupe. Wait 20 seconds for the foam to settle, then garnish with the fig wedge.

The Devotti twist: Fig preserves add a rounded fruit note; ginger honey brings warmth beneath the lemon and creamy-looking foam.

Make ahead and storage

Refrigerate syrup covered up to 3 days. Refrigerate unused aquafaba according to the canned product’s storage instructions. Shake to order.
