  • 1 cup buttermilk
  • 1 tsp kosher salt
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • Neutral oil for frying, about 3–4 cups or enough for a 1½-inch depth
02

Biscuits & slaw

  • 24 small baked biscuits, about 2 inches wide
  • 2 cups shredded cabbage
  • ¼ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • ¼ tsp kosher salt
  • 24 short food-safe picks
03

Hot honey

  • ⅓ cup honey
  • 1 tbsp hot sauce
  • 1 tsp apple cider vinegar
02 / The process

Make the moment.

Follow the steps in order for the best texture and finish.

  1. 01
Marinate chicken with buttermilk, salt, paprika, and garlic powder for at least 20 minutes in the refrigerator.
  2. 02
Mix flour, cornstarch, and baking powder. Toss cabbage with mayonnaise, vinegar, and salt; chill. Warm honey, hot sauce, and vinegar briefly, then set aside.
  3. 03
Heat 1½ inches of oil to 350°F in a deep, heavy pot. Lift chicken from marinade, coat thoroughly in flour mixture, and fry in batches for 5–7 minutes until golden and 165°F inside. Drain on a rack.
  4. 04
Split warm biscuits. Add slaw, one chicken piece, and a teaspoon of hot honey to each. Secure with picks and serve promptly.
03 / Graduation party presentation

Bring it to the table.

Build on a dark tray in neat rows; finish with a few gold-toned picks. Keep the hot honey separate until guests arrive.
