01

Pancakes

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp kosher salt
  • ¾ cup whole-milk ricotta
  • ½ cup buttermilk
  • 1 large egg
  • 1 tbsp finely grated lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp melted unsalted butter, plus 1 tbsp for the pan
02

Whipped topping

  • 6 oz mascarpone, chilled
  • ½ cup cold heavy cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
03

Finish

  • 1 cup strawberries, thinly sliced
  • 2 tbsp honey
  • 12 small basil leaves, halved
02 / The process

Make the moment.

Follow the steps in order for the best texture and finish.

  1. 01
Whisk flour, sugar, baking powder, baking soda, and salt. In another bowl whisk ricotta, buttermilk, egg, lemon zest, lemon juice, and 2 tablespoons melted butter. Fold wet into dry just until combined; rest 10 minutes.
  2. 02
Beat mascarpone, cold cream, powdered sugar, and vanilla to soft peaks. Refrigerate until serving.
  3. 03
Heat a nonstick skillet over medium-low and brush lightly with the remaining butter. Divide the batter into 48 small pancakes, using about 2–3 tsp per pancake. Cook 1–2 minutes until bubbles form and edges set; flip and cook 1 minute more. Work in batches and cool slightly.
  4. 04
Pair pancakes into 24 stacks. Add a spoonful of whipped mascarpone and two strawberry slices between each pair; finish with a little more topping, honey, and half a basil leaf. Serve immediately.
03 / Bridal shower presentation

Bring it to the table.

Present the stacks on a tiered ivory stand. Drizzle the honey just before guests arrive so each bite catches the light.
