Maple-Tahini Hasselback Sweet-Potato Coins
The formula

Ingredients

Sweet-potato coins

  • 600 g sweet potatoes, scrubbed
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ¼ tsp fine salt

Maple-tahini finish

  • 2 tbsp (30 g) tahini
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 2 tsp sesame seeds
  • 1 tbsp chopped parsley

Equipment

Air fryer, sturdy knife, cutting board, two wooden chopsticks or low knife guides

Allergens and ingredient notes: Sesame. Tahini thickness varies by brand; the listed water makes a thick drizzle, not a thin dressing.

The process

Step by step

  1. Cut sweet potatoes into ¾-inch (2 cm) rounds. Place one round flat on the board between two low wooden knife guides. Make close parallel cuts across its top, about ⅛ inch apart, stopping at the guides so the bottom stays intact. Use guides low enough that cuts reach about two thirds of the way through; do not cut all the way through.
  2. Toss or brush coins with olive oil, paprika, and salt, working a little oil into the cuts. Preheat the air fryer to 380°F (195°C) according to its manual.
  3. Place half the coins in one layer with space between them. Air-fry 12–16 minutes, turning gently once at 7 minutes, until a knife slides into the centers and the ridges have browned. Thicker or larger rounds may need longer; keep cooking in 2-minute intervals until tender. Repeat with the remaining coins.
  4. Whisk tahini, maple syrup, lemon juice, and water into a pourable sauce. If the tahini initially tightens, keep whisking until smooth.
  5. Divide coins into 4 side portions. Spoon one quarter of the sauce over each, then divide sesame and parsley evenly. Add sauce only at serving so the ridges retain their texture.

The Devotti twist: Hasselback cuts create extra ridges on a small, easy-to-turn round, carrying a sweet-sesame finish without turning the potato into fries.

Air-fryer setup and batch notes

Cut rounds to an even thickness and keep them flat in the basket. Do not force the knife through a rocking piece of sweet potato; use a stable board and safe knife technique. Air-fry in more than 2 batches if your basket is small.

Appliances vary: use the listed time as a starting range, check early, leave space for airflow, and follow your model’s manual for preheating and compatible cookware. Use the stated doneness cues and internal temperatures rather than time alone.

Make ahead and storage

Refrigerate cooked coins and sauce separately within 2 hours for up to 3 days. Reheat coins in the air fryer until hot throughout; add sauce, sesame, and parsley afterward.
