Passion Fruit Coconut Posset Cups
Silky coconut-scented lemon cream sets beneath bright passion fruit and a toasted coconut finish.

The formula
Ingredients
Posset
- 2 cups heavy cream, at least 35% milk fat
- ½ cup (100 g) granulated sugar
- ⅓ cup unsweetened full-fat canned coconut milk, stirred smooth
- ⅓ cup fresh lemon juice
- ½ tsp vanilla extract
Finish
- ½ cup unsweetened passion fruit pulp with seeds, fresh or thawed
- 1 tbsp granulated sugar
- ¼ cup unsweetened coconut flakes
Equipment
Saucepan, fine grater, measuring jug, six 5-fl-oz glasses
Allergens and ingredient notes: Milk, coconut; this recipe uses dairy cream and is not dairy-free.
The process
Step by step
- Combine heavy cream, its ½ cup sugar, and coconut milk in a saucepan with room to bubble. Bring to a gentle boil over medium heat, stirring to dissolve sugar. Reduce heat enough to maintain a gentle boil for 3 full minutes, stirring often and watching so it does not boil over.
- Remove from heat and stir in all the measured lemon juice and vanilla. Let stand 10 minutes. The lemon supplies the acid that sets the cream; do not replace it entirely with passion fruit or use low-fat cream.
- Divide the warm mixture among six glasses, about ½ cup per glass. Cool at room temperature for 20–30 minutes, then cover and refrigerate at least 6 hours until set. Do not add topping before the cream has set.
- In a small saucepan stir passion fruit pulp with its separate 1 tbsp sugar. Simmer 2 minutes, stirring, then cool completely and refrigerate. Toast coconut flakes in a dry skillet over medium-low heat for 2–3 minutes, stirring until pale golden; cool.
- Divide cold passion fruit topping among the set possets. Add toasted coconut just before serving so it stays crisp. Serve small portions; this is a rich cream dessert.
The Devotti twist: Coconut milk rounds out a lemon-set cream, while the passion fruit stays as a distinct tart topping.
Make ahead and storage
Keep posset and topping covered in the refrigerator up to 3 days. Add dry coconut only at serving; refrigerate cream within 2 hours of cooking.
