Persimmon Rosemary Prosecco Spritz
The formula

Ingredients

One drink — all oz are US fl oz

  • 1 oz smooth ripe Fuyu persimmon purée (blend peeled flesh; measure only 1 oz)
  • ½ oz fresh lemon juice
  • ½ oz elderflower liqueur
  • 3 oz chilled brut prosecco
  • 1 oz chilled club soda
  • 1 cup ice cubes
  • 1 small fresh rosemary sprig

Equipment

Blender, bar spoon, 14-oz wine glass

Allergens and ingredient notes: Alcohol, sulfites in prosecco; check elderflower liqueur.

Liquid oz means US fluid ounces (1 fl oz ≈ 30 mL); solid ingredients use the weights or spoon measures listed. Each recipe makes one drink. For adults 21 and over.

The process

Step by step

  1. Peel and blend ripe Fuyu persimmon flesh until smooth; measure 1 oz and refrigerate any extra purée. Stir measured purée, lemon and elderflower liqueur in wine glass.
  2. Add ice, slowly pour in prosecco and soda, and lift gently once with spoon without beating out bubbles. Clap rosemary sprig lightly and tuck beside ice.

The Devotti twist: Persimmon supplies body and sweetness so the sparkling drink needs no separate sugar syrup.

Make ahead and storage

Serve immediately. Refrigerate extra persimmon purée in a sealed container up to 2 days.
