- ½ fl oz agave nectar
- 1 tsp unsweetened seedless tamarind concentrate
- 1 tbsp warm water
- 1 cup ice for shaking
- 1 cup ice for serving
Finish
- 1 lime wedge, for wetting the rim
- ½ tsp chili-lime seasoning, for a partial rim
- 1 small pineapple wedge
Equipment
Shaker, fine strainer, 10-fl-oz rocks glass
Allergens and ingredient notes: Alcohol; check mezcal, agave, and seasoning labels.
Measurements are US fluid ounces (fl oz), tablespoons (tbsp), and teaspoons (tsp). Syrup components may make extra: use only the drink quantity listed. These recipes contain alcohol and are intended for adults 21 and over.
Step by step
- Stir the unsweetened seedless tamarind concentrate with the warm water until smooth. Let cool completely. Use the entire diluted tamarind portion in this cocktail; avoid tamarind candy sauce or sweetened syrup as a substitute.
- Rub half the glass rim with the lime wedge and press into the measured chili-lime seasoning. Fill the glass with its serving ice.
- Add mezcal, pineapple juice, lime juice, agave, and all diluted tamarind to a shaker with the shaking ice. Shake 12–15 seconds, then fine-strain into the prepared glass.
- Garnish with the pineapple wedge. The smoke note comes from the mezcal; no additional smoking equipment is needed.
The Devotti twist: Tamarind gives pineapple a tart, earthy edge and the half rim allows a choice of seasoned or clean sips.
