Pistachio Lemon Tiramisu Slices
Lemon-soaked ladyfingers alternate with airy pistachio mascarpone for a bright, chilled slice.

The formula
Ingredients
Lemon dip
- ¾ cup water
- ¼ cup (50 g) granulated sugar
- ¼ cup fresh lemon juice
Pistachio cream and layers
- 8 oz (225 g) mascarpone, cold
- ½ cup (120 g) sweetened pistachio cream spread, not unsweetened nut butter
- 1 cup cold heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 tsp finely grated lemon zest
- About 24 crisp ladyfinger biscuits, 7 oz (200 g) total
- ¼ cup chopped unsalted pistachios
Equipment
8-inch square dish at least 2 inches deep, hand mixer, saucepan
Allergens and ingredient notes: Milk, pistachio, wheat, egg in most ladyfingers; check spread and biscuit labels.
The process
Step by step
- Warm the water and granulated sugar in a saucepan, stirring until dissolved. Remove from heat, stir in lemon juice, and cool completely in a shallow bowl.
- Beat mascarpone and sweetened pistachio cream briefly on low speed just until smooth. In a separate bowl whip cold heavy cream, powdered sugar, and vanilla to medium-stiff peaks. Fold the whipped cream and lemon zest gently into the mascarpone mixture.
- Quickly dip half the ladyfingers one at a time into the cooled lemon syrup, about 1 second per side; do not soak. Arrange tightly across the base of the dish, trimming to fit. Spread half the pistachio cream evenly over them.
- Repeat with remaining ladyfingers and cream. The lemon dip may leave a little unused syrup; discard it after dipping rather than pouring it over the finished dessert. Cover and refrigerate at least 8 hours, preferably overnight, until the layers hold together.
- Sprinkle with all the chopped pistachios just before serving. Cut into nine squares with a clean knife, wiping between cuts. This is a lemon-pistachio variation with no coffee or raw egg in the cream.
The Devotti twist: A quick lemon dip replaces espresso while sweetened pistachio cream flavors the mascarpone without a separate frosting.
