Raspberry Rose Chocolate Crackle Parfaits
The formula

Ingredients

Raspberry cream

  • 1½ cups (190 g) fresh or frozen raspberries
  • 3 tbsp granulated sugar
  • 1 tsp fresh lemon juice
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp powdered sugar
  • ⅛ tsp food-grade rosewater
  • ¾ cup cold heavy cream

Crunch and lid

  • ¾ cup (90 g) crushed chocolate wafer cookies
  • 2 oz (55 g) dark chocolate, chopped
  • 1 tsp refined coconut oil
  • 1 tbsp crushed freeze-dried raspberries

Equipment

Six 6-fl-oz glasses, saucepan, mixer

Allergens and ingredient notes: Milk, wheat, coconut; wafer cookies and chocolate may contain soy or egg.

The process

Step by step

  1. Simmer the raspberries, granulated sugar, and lemon juice over medium-low heat for 8–10 minutes until thick. Crush the berries, then transfer to a shallow bowl and cool completely, about 30 minutes.
  2. Beat cream cheese and powdered sugar until smooth. Beat in the cooled raspberry mixture and measured food-grade rosewater. Whip the cold cream to soft peaks separately, then fold into the raspberry mixture.
  3. Divide all cookie crumbs among the glasses, followed by all raspberry cream. Leave at least ½ inch space at the top. Refrigerate for 30 minutes.
  4. Melt chocolate with coconut oil in short microwave bursts, stirring between bursts. Let cool 5 minutes until barely warm and still pourable. Divide into six equal portions and spread a thin lid over each chilled cream surface.
  5. Sprinkle the freeze-dried raspberries over the lids and refrigerate another 30 minutes until set. Serve cold and crack each lid with a spoon.

The Devotti twist: A measured trace of rosewater lifts the berry aroma; the thin chocolate lid creates a clean crack rather than a hard thick shell.

Make ahead and storage

Refrigerate covered for up to 2 days. The cookie base softens slightly over time.
