01 / The formula

For a table of two.

Measure everything before you begin and set the table for the finish.

01

Steak & sauce

  • 2 filet mignon steaks (6 oz each), about 1½ inches thick
  • 1 tsp kosher salt, divided
  • ½ tsp black pepper
  • 1 tbsp neutral oil
  • 1 tbsp unsalted butter
  • 1 small shallot, finely chopped
  • ½ cup dry red wine
  • ½ cup low-sodium beef stock
  • 1 tsp fresh thyme leaves
02

Potatoes & greens

  • 1 lb Yukon Gold potatoes, peeled and cubed
  • 3 tbsp unsalted butter
  • ¼ cup warm whole milk
  • ½ tsp kosher salt
  • 8 oz broccolini
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Water for boiling the potatoes and 1 tsp additional kosher salt for that water
02 / The process

Make the moment.

Follow these steps in order for the best texture and presentation.

  1. 01
Boil potatoes in salted water 15–18 minutes until tender. Drain well, mash with 3 tbsp butter and warm milk, and season with ½ tsp salt. Keep warm.
  2. 02
Pat steaks dry; season both sides with ½ tsp of the salt listed under Steak & sauce and pepper. Heat a heavy skillet over medium-high heat. Add neutral oil and sear steaks 3–4 minutes per side, then add 1 tbsp butter and baste until an instant-read thermometer registers 145°F. Rest 8–10 minutes (at least 3 minutes).
  3. 03
Meanwhile roast broccolini with olive oil at 425°F for 10–12 minutes until tender and lightly charred. Toss with lemon juice.
  4. 04
Pour off excess fat from the steak skillet. Cook the shallot over medium heat for 2 minutes with the remaining ½ tsp salt from the Steak & sauce ingredients. Add wine and simmer until reduced by half, about 3 minutes. Add stock and thyme; simmer 4–6 minutes until lightly syrupy.
  5. 05
Plate potatoes and broccolini, add the rested steaks, and spoon on the red wine sauce.
03 / Anniversary presentation

Serve it together.

Warm the plates before serving. Spoon the sauce around the steak and leave the top crust visible.
