The formula

Ingredients

Four waffles

  • 160 g all-purpose flour
  • 1½ tsp (6 g) baking powder
  • ⅛ tsp fine salt
  • 1 large egg
  • ¾ cup (180 mL) whole milk
  • 2 tsp (10 g) neutral oil, divided

Turkey filling

  • 200 g cooked roast turkey breast, thinly sliced
  • 80 g plain cream cheese, softened
  • 60 g fresh or frozen cranberries
  • 2 tbsp (30 mL) water
  • 2 tsp (14 g) honey

Sides

  • 160 g carrots, cut into short thin batons
  • 240 g ripe pear, cored and thinly sliced

Equipment

Waffle iron, mixing bowls, small saucepan, steamer

Allergens and ingredient notes: Wheat, milk, egg. Check cooked turkey for added allergens. Contains honey.

The process

Step by step

  1. Simmer cranberries with the 2 tbsp water and honey for 5–7 minutes until berries burst and the mixture thickens to a spread. Cool, mash thoroughly and mix with cream cheese. Refrigerate. Honey is unsuitable for children under 12 months.
  2. Whisk flour, baking powder and salt. In another bowl, whisk egg, milk and 1 tsp oil. Fold wet into dry just until combined. Heat the waffle iron according to its instructions and brush with the other 1 tsp oil. Cook 4 equal waffles, each until golden, the surface stops heavily steaming and the interior is fully set.
  3. Steam carrot batons 4–6 minutes, or until soft enough for the child’s eating skills. Cool waffles on a rack, then refrigerate waffles, cooked carrots and turkey promptly within 2 hours.
  4. Once cold, cut each waffle into 4 quarters. Spread 2 quarters with one quarter of the cranberry cream cheese, divide 50 g turkey between them and top with the other 2 quarters, making 2 little sandwiches for each box. Repeat with remaining waffles and filling. Divide carrots and pear among separate compartments.

The Devotti twist: A tart cranberry cream cheese replaces loose sandwich sauce, and homemade waffles become a soft textured sandwich bread.

Pack it well

Pack cold waffle sandwiches dry, with carrot and pear in separate cups. Slice sandwiches smaller if needed; no skewers. Refrigerate cooked food promptly in shallow containers and within 2 hours; chill fully before closing lunchboxes. Transport at 40°F (4°C) or colder in an insulated bag with two cold sources, one above and one below the food, or refrigerate on arrival. Discard perishable food left above 40°F for more than 2 hours, or 1 hour above 90°F (32°C).

Swaps and serving notes

Use plain soft bread instead of waffles if preferred; 2 small slices per lunchbox. Choose cooked turkey with a suitable ingredient label, or freshly cook turkey to 165°F (74°C) and chill before slicing. Check the school’s current ingredient rules and each packaged ingredient label; no lunch is universally school-safe. Adapt bite size and firmness to the child’s age and eating skills; no skewers or toothpicks.

Make ahead and storage

Refrigerate prepared waffles and turkey for up to 3 days; cranberry cream cheese for 3 days. Assemble on packing day for best texture.
