The formula

Ingredients

Shared meatballs and sauce

  • 600 g 93% lean ground turkey
  • 1 large egg
  • ½ cup (40 g) plain breadcrumbs
  • ½ small onion (60 g), finely grated
  • 1 tsp dried oregano
  • ½ tsp fine salt
  • 1 tsp olive oil, for the pan
  • 1½ cups (360 g) mild marinara sauce, divided

Kid version: 2 boxes

  • 120 g dry small pasta
  • ½ cup (70 g) frozen peas

Adult version: 2 boxes

  • ½ cup (85 g) dry whole-wheat couscous
  • ½ cup (120 mL) boiling water, or package-required amount
  • 1 tbsp (15 g) harissa paste
  • 60 g baby spinach, washed and dried
  • ¼ cup (30 g) pitted olives, chopped

Equipment

Sheet pan, saucepan, heatproof bowl, instant-read thermometer

Allergens and ingredient notes: Wheat, egg; check breadcrumbs and sauces for milk, sesame, or other allergens.

The process

Step by step

  1. Heat oven to 425°F (220°C). Line a pan and brush with the oil. Mix turkey, egg, breadcrumbs, grated onion and its juices, oregano, and salt just until combined. Shape 16 equal meatballs and space on the pan.
  2. Bake 18–22 minutes, turning once, until every meatball reaches 165°F (74°C). Warm marinara in a saucepan. Reserve ½ cup (120 g) of plain sauce for the kid version; stir harissa into the remaining 1 cup (240 g) sauce for adults.
  3. Cook kid pasta and peas according to their separate package directions and drain well. Hydrate couscous with boiling water at its package ratio and stand covered for the package time, then fluff.
  4. Kid version: assign 6 meatballs total, 3 per box. Divide kid pasta, peas, and the reserved plain sauce between 2 boxes. Keep peas in a separate compartment if preferred.
  5. Adult version: assign the remaining 10 meatballs, 5 per box. Divide couscous, spinach, olives, and the harissa sauce between 2 adult boxes. For softer spinach, stir it into the hot adult sauce before cooling.
  6. For cold lunch packing, promptly refrigerate all cooked components in shallow containers within 2 hours and chill fully before closing the boxes. At lunch, eat cold if preferred or reheat the cooked portions to 165°F (74°C) in appropriate containers.

The Devotti twist: A single meatball tray and one tomato sauce become two lunches simply by splitting the sauce before adding harissa and changing the base.

How to pack

Label kid and adult sauce clearly so the spicy version goes to the correct box. Use leakproof containers, and keep chilled even if planning to reheat later. Meatballs can be cut into smaller pieces when packing for the child.

Swaps and preferences

Keep the kid sauce separate for dipping if preferred. For a milder adult box, replace the harissa with 1 tbsp extra marinara. Use suitable gluten-free breadcrumbs, pasta, and a rice base if avoiding wheat; follow their package cooking directions.

For cold lunches, pack fully chilled perishable food in an insulated bag with at least two cold sources. Keep at 40°F (4°C) or below and refrigerate on arrival when possible. Discard perishables left out more than 2 hours, or 1 hour above 90°F (32°C).
