Violet Afterdark
Deep violet berries, floral gin, sharp lemon, and a rosemary smoke reveal after dark.

The formula
Ingredients
Cocktail
- 1½ oz London dry gin
- ¾ fl oz fresh blackberry purée, fine-strained (blend about ¼ cup ripe blackberries, then measure)
- ½ oz unsweetened blackcurrant juice
- ¾ oz fresh lemon juice
- ¼ oz crème de violette
- ½ oz rosemary honey syrup
- Tiny pinch sea salt
- Ice
Rosemary honey syrup
- ¼ cup honey
- ¼ cup hot water
- 1 fresh rosemary sprig
Glass and finish
- Chilled coupe glass
- 2 fresh blackberries
- 1 small rosemary sprig
- Optional tiny pinch certified edible silver luster
- Optional food-safe smoking gun and cloche, with manufacturer-approved food-smoking wood chips in the quantity specified by its instructions
The process
Step by step
- Make the syrup: stir honey and hot water until smooth. Add one rosemary sprig, steep for 10 minutes, remove the sprig, and cool completely.
- Blend or muddle ripe blackberries, then press through a fine sieve to make ¾ oz smooth purée. Chill a coupe glass.
- Add gin, blackberry purée, blackcurrant juice, lemon juice, crème de violette, rosemary honey syrup, a tiny pinch of salt, and optional edible silver luster to a shaker. Fill with ice.
- Shake hard for 12–15 seconds. Double-strain into the chilled coupe so the drink stays smooth and deep violet.
- Garnish with two blackberries and a small rosemary sprig. If using a food-safe smoking gun, briefly fill a cloche over the drink with smoke made using the manufacturer-approved chips for 15–20 seconds; follow the device instructions, then lift it at the table.
The Devotti twist: rosemary honey softens the tart berries, while a short smoke reveal gives the first sip its after-dark aroma. Use only luster specifically labeled edible.

Measurements: oz in the cocktail formula means US fluid ounces. Homemade syrup, purée, and cream components can make more than one drink: use the exact cocktail amounts listed, rather than adding the whole batch. Prepared vanilla or simple syrup may be store-bought. Chill prepared components before mixing.
