01 / The formula

A little celebration in every cup.

Warm roasted berries meet cool, lightly sweetened goat cheese. Assemble just before guests arrive to keep the pastry crisp.

01

Pastry & berries

  • 24 frozen mini phyllo shells
  • 1 lb strawberries, hulled and quartered
  • 1 tbsp honey
  • 1 tsp finely grated lemon zest
02

Whipped filling

  • 8 oz soft goat cheese, at room temperature
  • 2 tbsp heavy cream
  • 1 tbsp honey
  • Pinch of kosher salt
03

Finishing notes

  • ⅓ cup shelled pistachios, finely chopped
  • 1 tsp fresh thyme leaves
  • 2 tbsp balsamic glaze
02 / The process

Make the “yes” moment.

Let the berries cool before they touch the cheese, then fill the shells shortly before serving.

  1. 01
Heat the oven to 375°F. Toss the strawberries with 1 tbsp honey and the lemon zest. Spread them in one layer on a parchment-lined baking sheet.
  2. 02
Roast for 12–15 minutes, until the berries soften and their juices turn glossy. Let cool to room temperature, then drain off excess juice so the shells stay crisp.
  3. 03
While the berries cool, beat the goat cheese, cream, remaining 1 tbsp honey, and salt for 1–2 minutes until smooth and fluffy.
  4. 04
Place the phyllo shells on a baking sheet and crisp according to package directions, usually 3–5 minutes at 350°F. Cool completely.
  5. 05
Spoon or pipe divide all the goat cheese filling evenly, about 2 teaspoons per shell, into each shell. Add two or three strawberry pieces, then finish with pistachios, thyme, and a light drizzle of balsamic glaze. Serve within 30 minutes.
03 / Engagement presentation

A tray made for their story.

Arrange the cups in two curved rows that meet in the center. Place a small card with the couple’s names or engagement date beside the tray. The roasted strawberries and cheese can be prepared a day ahead and refrigerated separately; bring the cheese to a spreadable temperature before assembly.
