Step by step
- Heat oven to 325°F (165°C). Place ramekins on a baking tray. Blend ricotta, yogurt, eggs, cocoa, sugar, vanilla and salt until smooth, scraping down the sides. Divide evenly among ramekins, leaving at least ½ inch of headspace.
- Bake 25–30 minutes, until edges are set and centers have a slight wobble but no liquid ripples; centers must reach 160°F (71°C). Cool until initial steam subsides, then refrigerate promptly, within 2 hours of baking. Chill for at least 2 hours.
- Simmer cherries, lemon juice and honey in a small saucepan over medium-low for 5–7 minutes until the fruit is soft and juices lightly thicken. Cool in a shallow container and refrigerate.
- Divide chilled cherry topping among the 4 pots and sprinkle with chopped hazelnuts just before serving. Each snack portion is 1 full pot with a quarter of the topping.
The Devotti twist: Ricotta and Greek yogurt bake into a cocoa-rich custard rather than a protein-powder pudding; cherry syrup provides the bright counterpoint.
Make ahead and storage
Keep pots and topping refrigerated for up to 3 days. Store hazelnuts separately and add at serving. These are snack or dessert portions, not a meal replacement.
